Winter eggs

As some of you know, I live on a small farm. Mostly we raise chickens for eggs. That being said, the chickens slow down in their egg production during the winter. If we want farm eggs during the lean months we need to store them somehow.

The freezer is a good option. How we do it is by cracking a dozen eggs into a bowl and mixing them up a bit. Then pour them into ice cube trays and pop them into the freezer.

When the eggs are frozen take them out and put them into a freezer bag.

When you want to use them, two cubes makes one egg. Good for scrambled eggs, French toast, and anything you need an egg for. Not good for over easy!
